St. Patrick's Day

We had a wonderful family lunch at the beach.  We had corned beef and cabbage, Shepherd’s Pie, lots of Guinness and some Guinness Cheese Cake - Very interesting.  I wanted to make Guinness Ice Cream, like our friend Tom does, but unfortunately our freezer is too small for the ice cream drum and I had to improvise.  I used cheesecake instant pudding mixed with Guinness instead of milk and combined with some Cool Whip and plopped into a graham cracker crust.  It wasn’t half bad! I recommend you cut the liquid in half when adding to the pudding for a pie filling, otherwise it gets a little runny. The day was sunny and the ocean was stunning.

Moving on Down

I told Laton he is moving us back to Arizona 20 miles at a time.  Our summer position is on the lot next to Stone Lagoon Visitor Center, 5 miles south of Orick, CA and 15 miles north of Trinidad, CA.  We will be staying there and Laton will be working on the cabin there and maintaining the wilderness campground across the Lagoon.  It is right on Hiway 101 so honk on your way by. lol
